Salmon with noodles in a green pesto sauce with pine nuts

Salmon is always delicious, even when canned. This is the only way you can take salmon with you on a cycling vacation. Here we use soft noodles. We make a sauce with green pesto and a shallot, some pine nutes and schredded dried basil for extra flavor.

Great food for after a day on the bike!

Preparation time: maximaal 10 minuten

Ingredients (per person):

  • Pre-cooked noodles for wok (soba, ramen, udon or somen) - 150 grams
  • 1 shallot
  • Pine nuts (half a handful)
  • Canned salmon - 100 grams
  • Green pesto - 100 grams
  • Dried basil (shredded)
  • Olive oil

Preparation:

  • Cut the shallot into rings and briefly stew in a little olive oil
  • Add the pine nuts and let them simmer for a moment
  • Then add the salmon and crumble it into pieces
  • Add the pesto as well, and stir
  • Add a little water so that there is a little more liquid in the stew
  • Now add the noodles. Often you have to knead these first in the packet
  • Let everything cook for a few minutes
