Salmon with noodles in a green pesto sauce with pine nuts
Salmon is
always delicious, even when canned. This is the only way you can take salmon
with you on a cycling vacation. Here we use soft noodles. We make a sauce with
green pesto and a shallot, some pine nutes and schredded dried basil for extra
flavor.

Ingredients (per person):
- Pre-cooked noodles for wok (soba, ramen, udon or somen) - 150 grams
- 1 shallot
- Pine nuts (half a handful)
- Canned salmon - 100 grams
- Green pesto - 100 grams
- Dried basil (shredded)
- Olive oil
Preparation:
- Cut the shallot into rings and briefly stew in a little olive oil
- Add the pine nuts and let them simmer for a moment
- Then add the salmon and crumble it into pieces
- Add the pesto as well, and stir
- Add a little water so that there is a little more liquid in the stew
- Now add the noodles. Often you have to knead these first in the packet
- Let everything cook for a few minutes
